What is the difference between human resource management and employment (industrial) relations?
As in careers. What would it be like working in each area?

That really depends on the specific duties of the job. Either job could do neither or both. If you specialize in an area of HR like benefits, you would only deal with benefits all day. If you specialize in HR employee relations, you would do that all day. An HR generalist would do all areas of HR including employment relations. An employment relations person may also have the responsibility of all aspects of HR or it may be just dealing with employee relations.
